Pulse cauliflower florets and water in a blender for 5-10 seconds (chop hard stems and inner core off) until rice size/texture. Drain off water, eat raw or lightly sautee in coconut oil or grass fed butter. Top with your favorite pasta sauce or add cilantro/lime or scramble an egg for egg fried cauliflower rice.

Cauliflower Rice replaces grain based Pasta. Cauliflower is more nutritious, more flavorful and textured, and results in a more stable blood sugar level.
